Ingredients:


  • 1 lb. firm white fish (cod, haddock, flounder), cut into 2-4” piece
  • 2 eggs
  • 1-2 cups GF flour, cornmeal, crushed cornflakes, or breadcrumbs 1-2 tsp seafood seasoning (to taste)
  • Salt & pepper to taste
  • Cooking spray or oil


Preheat oven to 450 degrees.

Spray baking sheet with cooking spray or drizzle with oil.

Whisk eggs in pie plate.

If using cereal, chips or crackers, place in plastic bag & crush into crumbs.

Mix crumbs with flour or cornmeal & seasoning in second pie plate.

Place fish in eggs, then flour-crumb mixture.

Place on baking sheet.

Bake for 10-12 min or until nicely browned.

Serve with cocktail sauce & lemon wedges.

Cocktail sauce:  Mix together 1 cup jarred sweet roasted peppers, 4 sun-dried tomatoes, & 2 tsp balsamic vinegar in blender & blend until chunky.
