Ingredients:
- 3 cups almond flour
- 2 tsp salt
- 1 tsp baking soda
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 5 eggs
- ½ cup maple syrup
- ¼ cup grapeseed oil
- 4 cups carrots, grated
- 1 cup raisins (or currants)
- 1 cup walnuts (or pecans), chopped
- Cooking spray
Preheat oven to 325 degrees.
Cut two pieces of parchment paper the diameter of your 9 inch cake pans.
Spray the pans with cooking spray.
Place paper circles into the bottoms of the pans.
Spray pans again.
Combine flour, salt, soda & spices in large bowl.
In another bowl combine eggs, syrup & oil.
Stir carrots, raisins & walnuts into wet ingredients.
Stir wet into dry ingredients.
Pour batter into pans.
Bake 35 min.
Cool 10 min before removing from pans.
Allow to cool to room temperature before frosting.
