Ingredients:

  • 5 clementines (slightly less than 1 lb.)
  • 6 eggs
  • 1 cup plus 2 tbsp sugar
  • 2 1/3 cups almond flour
  • 1 heaping tsp baking powder
  • Optional: Powdered sugar for dusting or making glaze

Place clementines in slow cooker & cover with water.

Cook 4-6 hrs.

Drain & cool.

Cut each clementine in half & remove seeds.  

Place in food processor & pulse until smooth.

Preheat oven to 375 degrees.

Butter & line 8 or 9 inch springform pan with parchment paper

Beat eggs, add sugar, almond flour & baking powder.

Mix well, adding clementines.

Pour batter into pan & bake 30 min or when skewer comes out clean.

Remove from oven & cool in pan on rack.

Optional: Dust with powdered sugar or make a glaze with powdered sugar & clementine juice.

 

Note: Can be made with ½ oranges & ½ lemons (by weight), but increase sugar to 1 ¼ cups.
