Ingredients:

  • 5 cups GF rolled oats
  • 5 mashed bananas (or use 1 cup pumpkin in place of 2-3 bananas)
  • ½ cup ground flax seeds
  • ½ cup water
  • ½ cup peanut or almond butter
  • ½ cup chopped raisins, currants or dried cranberries
  • ½ cup chopped pecans or walnuts
  • ¼ cup chia seeds
  • 2 tbsp coconut oil
  • 1 ½ tsp vanilla extract
  • ½ tsp salt
  • 1/3 cup maple syrup
  • Optional: 1 tsp cinnamon

Preheat oven to 375 degrees F.

Line 9 x 13 inch casserole dish with parchment paper.

Mix altogether to form thick batter.

Pour & press into prepared dish.

Bake 45 min.

Cool completely before cutting into bars.

Wrap bars in plastic wrap & freeze.

Defrost for at least 15 min or heat in microwave before eating.
