Ingredients:
- 5 cups GF rolled oats
- 5 mashed bananas (or use 1 cup pumpkin in place of 2-3 bananas)
- ½ cup ground flax seeds
- ½ cup water
- ½ cup peanut or almond butter
- ½ cup chopped raisins, currants or dried cranberries
- ½ cup chopped pecans or walnuts
- ¼ cup chia seeds
- 2 tbsp coconut oil
- 1 ½ tsp vanilla extract
- ½ tsp salt
- 1/3 cup maple syrup
- Optional: 1 tsp cinnamon
Preheat oven to 375 degrees F.
Line 9 x 13 inch casserole dish with parchment paper.
Mix altogether to form thick batter.
Pour & press into prepared dish.
Bake 45 min.
Cool completely before cutting into bars.
Wrap bars in plastic wrap & freeze.
Defrost for at least 15 min or heat in microwave before eating.
