Ingredients:

  • ½ cup pumpkin puree (or 4 mashed overripe bananas)
  • ¼ cup almond milk (or coconut, soy, etc.)
  • 4 eggs
  • 2 tsp maple syrup or honey
  • 2 tbsp vanilla extract
  • ¼ cup coconut flour
  • 1 cup almond meal
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp cloves
  • Oil, as needed 

Mix pumpkin, milk, eggs, syrup & vanilla together in bowl until smooth.

Whisk flours, baking soda, salt & spices together in another bowl.

Stir pumpkin mixture into dry ingredients.

Allow batter to sit for 3 min.

Heat oil in griddle/skillet over low heat (350 degrees on griddle).

Pour silver dollar-sized circles of batter into hot oil.

Cook until lightly browned (about 3-4 min per side).
