Ingredients:

  • 1 tsp basil
  • 1 tsp garlic powder
  • ½ tsp oregano
  • ½ tsp rosemary
  • ½ tsp salt
  • 4 salmon filets
  • 1 tbsp plus 2 tsp olive oil, divided
  • 1 tsp sugar
  • 1 fennel bulb, cored & sliced, or scallions, sliced
  • 1 cup cherry tomatoes
  • Water
  • Optional: Lemon wedges, fennel tops for garnish; greens for bed

Mix seasonings in medium bowl.

Sprinkle 2 tsp over salmon.

Reserve remaining seasoning mixture in bowl & set aside.

Heat 1 tbsp oil in large skillet on medium-high heat.

Place salmon, skin-side up, in skillet.

Cook 5 min.

Meanwhile, mix sugar & remaining 2 tsp oil with reserved seasoning mixture.

Add fennel & tomatoes, tossing to coat.

Turn salmon fillets.

Place fennel mixture around salmon in skillet, adding water as needed.

Cook 6 min or until fish flakes easily with fork.

Garnish with fennel tops & serve with lemon wedges over greens, if desired.
