Ingredients:
- 2 cups almond flour
- 1 tsp baking soda
- 1 tbsp pumpkin pie spice or 1 tbsp cinnamon plus 1 tsp nutmeg
- 1 tbsp flax meal (optional)
- 1 cup pumpkin puree or 2-3 mashed bananas
- 3 eggs
- ΒΌ cup grape seed oil
- 1/2 cup honey or maple syrup
- 1 cup chopped nuts (optional)
- 1 cup blueberries (optional)
Preheat oven to 350 degrees.
Place muffin papers in muffin tin (12).
Mix together first 4 (3 if not using flax) ingredients in medium bowl.
In separate large bowl, mix together remaining (except nuts) ingredients.
Add wet to dry ingredients.
Stir in nuts.
Divide batter into muffin papers.
Bake 25 min.
Check with toothpick for doneness.
