Ingredients:

  • 1 extra firm tofu – drained & cubed
  • 2 cups water
  • Juice of 2 lemons (6 tbsp)
  • 1 tbsp salt
  • 2 tsp basil
  • 2 tsp oregano
  • 2 tbsp nutritional yeast 

Combine all together in medium saucepan.

Bring to boil.

Reduce heat & simmer uncovered 30 min.

Set aside to cool.

Place tofu & brine in air-tight container in fridge overnight or longer.

Can be used hot or cold over rice, pasta, salad, or by itself.
