Ingredients:
- 1 extra firm tofu – drained & cubed
- 2 cups water
- Juice of 2 lemons (6 tbsp)
- 1 tbsp salt
- 2 tsp basil
- 2 tsp oregano
- 2 tbsp nutritional yeast
Combine all together in medium saucepan.
Bring to boil.
Reduce heat & simmer uncovered 30 min.
Set aside to cool.
Place tofu & brine in air-tight container in fridge overnight or longer.
Can be used hot or cold over rice, pasta, salad, or by itself.
